Chef LaLa Teaches Families How To “Have It All” – Healthy Food That Also Tastes Good

LOS ANGELES (March 16, 2012) – Accomplished cookbook author and certified nutritionist, Chef LaLa will be the featured chef on the next episode of Univision’s weight-loss competition series “Dale Con Ganas” (“Give It All You’ve Got”).  The show airs weekly on Sundays at 5pm / 4pm CT. 

The program – from the creator and executive producer of “The Biggest Loser,” Dave Broome and executive producer Emilio Estefan – is Spanish-language family docu-soap with a competitive weight loss component, following four families of various Latino nationalities whose common denominator is that they are all battling obesity.  Chef LaLa, who is known for a healthy approach to authentic Latin flavors using fresh natural ingredients, guides the families on cooking healthy food that tastes good.  

“I come from a family with a history of diabetes and I’ve struggled with my own weight in the past, so I know first-hand how hard it is to fight that everyday battle,” said Chef LaLa.  “For many people, it’s not about looking good, it’s about staying healthy.  By helping the families on the show, I’m hoping to inspire viewers facing health issues of their own, and let them know that making smarter food choices doesn’t always mean sacrificing flavor.  You can have it all!” 

The show, which comes at a time when obesity in the Latino community has reached epidemic levels, aims to not only entertain but also encourage others to carry out healthier lifestyles.  In keeping with her mantra of “I want it all!” Chef LaLa has always insisted that food not only taste good but be good for you.  She currently serves as a spokesperson for the American Diabetes Association and the National Basketball Association’s “NBA FIT” program. 

“Dale con Ganas” is hosted by Alfonso ‘Poncho’ de Anda, co-host of Univision’s top rated morning program “Despierta América” (Wake-Up America).  Over the course of three months, top trainers María Simón, Marcelo Crudele, Oscar Luna and Luis Alberto Aracena, work with the four families who will compete, face defeat, succeed and transform their bodies and their lives publicly.  Dale Con Ganas is an exciting and emotional contest filled with heart-racing challenges, celebrity guests, and weekly surprises, with one family ultimately winning the grand prize of $100,000. But it’s much more than a competition.  It’s also a real-life family soap opera – times four.

Chicken Fajitas Recipe



INGREDIENTS:

  • 1 Pound boneless, skinless chicken breast halves*
  • 4 oz. Chef LaLa Homemade Fajitas Marinade
  • 1 ½ tsp. canola oil
  • 3 oz. red bell pepper, seeded, sliced lengthwise
  • 3 oz. red onion, peeled, thin slice
  • 1 each jalapeño, seeded, small dice
  • 1 tbsp. soy sauce, low sodium
INSTRUCTIONS:

  1. Pour Fajitas Marinade over chicken. Stir to fully coated.
  2. Cover, refrigerate, and allow to marinate for 2-4 hours
  3. Heat canola oil in a large skillet over a high heat-to achieve stir-fry
  4. Drain excess marinade from chicken
  5. Add chicken to skillet, sauté for 3 minutes, until golden brown
  6. Add red and green bell peppers, onion, and jalapeños
  7. Sprinkle soy sauce over vegetables, stir constantly
  8. Vegetables should be cooked, but still firm
  9. Serve immediately

1            tablespoon             Extra virgin Olive oil
½           pound                    Lean Ground Beef
1            bottle                     Chef LaLa Homemade Tomato Serrano Sauce
1            cup                        Water or Chicken Stock

½           pound                    dry pasta, cooked al dente
2            ounces                   cheese            

In a medium sauté pan heat oil over medium-high heat. Add meat. Cook to brown for 5-7 minutes. Add 1 bottle Chef LaLa Tomato Serrano Sauce. Add 1 cup of water. Cover, lower heat, simmer for 5 minutes.

Follow cooking instructions for your favorite pasta. Top with meat sauce. Sprinkle on your favorite cheese. (queso fresco used in picture)

Turkey Red Enchiladas


TURKEY RED ENCHILADAS
12 oz cooked shredded turkey 
6 corn tortillas (warmed so they are pliable)
6 oz cotija cheese, crumbled (or other cheese of choice)
Place 4 tablespoons CLH Red Sauce in a 12-in. skillet to cover bottom evenly.
Working one at a time, place 2 oz turkey in center of tortilla. Roll tortilla and place into skillet, overlap facing down. Repeat
Pour remainder of sauce over the tops of the enchiladas, and sprinkle with cheese.
Cover and cook over medium heat for 5 – 10 minutes.
Serves 2-3.
* --For Enchiladas Suizas, use CHEF LALA HOMEMADE GREEN SAUCE!

MODERN TIP FOR SOFTENING CORN TORTILLAS:
warm 15 seconds in microwave in a damp paper towel.

Healthy Holiday Tips - Bread


Healthy Thanksgiving tips: Try dipping your bread in tomato based sauce instead of a cream or butter based sauce. Remember that fat has more than twice the amount of calories than carbs and proteins per gram, so try to limit your intake of fat in order to avoid the overcosumption of calories.

Healthy smashed potatoes


When Preparing your potatoes, leave the skin on for extra fiber. It helps you feel full (which means you will eat less...hopefully ;) and can lower your cholesterol.

I boil my red potatoes until tender. Drain water, smash them and drizzle on some Chef LaLa Homemade Chipotle Oil for a smokey touch. Add salt and pepper. Serve warm

‎3 pounds mussels, 1 bottle Chef LaLa Homemade Tomato Serrano Sauce, 1/2 cup white wine, cover and steam. ENJOY!
