Red Chicken Enchiladas


12 oz cooked shredded chicken (or other filling of choice)
6 corn tortillas (warmed so they are pliable)
6 oz cotija cheese, crumbled (or other cheese of choice)

Place 4 tablespoons Chef LaLa Homemade Red Sauce in a 12-in. skillet to cover bottom evenly.

Working one at a time, place 2 oz chicken in center of tortilla. Roll tortilla and place into skillet, overlap facing down. Repeat.

Pour remainder of sauce over the tops of the enchiladas, and sprinkle with cheese.

Cover and cook over medium heat for 5 – 10 minutes.

Serves 2-3.

MODERN TIP FOR SOFTENING CORN TORTILLAS:
warm 15 seconds in microwave in a damp paper towel.

The theme for the “11th Annual Latina Business Conference” coordinated by the San Joaquin Country Hispanic Chamber of Commerce on March 22 at the Stockton Hilton Hotel was fitness and health. The keynote speaker was Chef LaLa, and she is a classically trained chef and certified nutritionist.
Alicia Arone, board member and past president of the SJC Hispanic Chamber stated, “In the past 11 years the luncheons have evolved. The first event was just a luncheon, and now the focus is health as is relates to business. [Today] We have a full house and the event sold out.”
“I attended the fitness and health insurance workshops this morning, and learned what to do to stay healthy at home and at the workplace. I’ve made connections, and I’m building Latina relationships in my community,” said Candelaria Vargas, Development Coordinator for Charterhouse Center for Families.
Chef LaLa runs her own catering business, SAVOR! in Los Angeles, and she has appeared with Martha Stewart, Dr. Oz and on NBS’s Today! Show. She also has a Spanish speaking following, and has been highlighted on Univision.
Chef LaLa prepared several simple and healthy meals in less than 5 minutes, including breakfast with frozen yogurt, granola and raspberries. Her unique sense of humor had the crowd laughing, and enjoying the art of preparing quick healthy meals.
She said, “Make time to eat healthy and take to care of yourself. Make time to cook and exercise.” Chef LaLa acknowledged and applauded the Stockton Unified School District and the San Joaquin Delta College students who attended the event.
“Every day is a gift. You are the creator of your own destiny, and what you make of it is your choice,” said Chef LaLa. Joining her at the event was her younger sister Veronica, and she said, “Because of her, I’m eating healthier and have lost 30 pounds in about 9 months. I’m eating more veggies.”

Chef LaLa Teaches Families How To “Have It All” – Healthy Food That Also Tastes Good

LOS ANGELES (March 16, 2012) – Accomplished cookbook author and certified nutritionist, Chef LaLa will be the featured chef on the next episode of Univision’s weight-loss competition series “Dale Con Ganas” (“Give It All You’ve Got”).  The show airs weekly on Sundays at 5pm / 4pm CT. 

The program – from the creator and executive producer of “The Biggest Loser,” Dave Broome and executive producer Emilio Estefan – is Spanish-language family docu-soap with a competitive weight loss component, following four families of various Latino nationalities whose common denominator is that they are all battling obesity.  Chef LaLa, who is known for a healthy approach to authentic Latin flavors using fresh natural ingredients, guides the families on cooking healthy food that tastes good.

Chicken Fajitas Recipe



INGREDIENTS:

  • 1 Pound boneless, skinless chicken breast halves*
  • 4 oz. Chef LaLa Homemade Fajitas Marinade
  • 1 ½ tsp. canola oil
  • 3 oz. red bell pepper, seeded, sliced lengthwise
  • 3 oz. red onion, peeled, thin slice
  • 1 each jalapeño, seeded, small dice
  • 1 tbsp. soy sauce, low sodium
INSTRUCTIONS:

  1. Pour Fajitas Marinade over chicken. Stir to fully coated.
  2. Cover, refrigerate, and allow to marinate for 2-4 hours
  3. Heat canola oil in a large skillet over a high heat-to achieve stir-fry
  4. Drain excess marinade from chicken
  5. Add chicken to skillet, sauté for 3 minutes, until golden brown
  6. Add red and green bell peppers, onion, and jalapeños
  7. Sprinkle soy sauce over vegetables, stir constantly
  8. Vegetables should be cooked, but still firm
  9. Serve immediately

Tequila Lime Shrimp Ceviche



At one of our favorite little dive restaurants in Montebello (East L.A. adjacent ;) - my sisters and I love the Camarones Ahogados (drowned shrimp) -  it is shrimp"cooked" in Lime juice, cilantro and and slices of Jalapenos - a ceviche of sorts. Ceviche is a dish that is cooked in acid, such as lemon and/or lime juice. If you use fresh shrimp, or other seafood, you should be fine. If you are even slightly concerned about freshness, you may be better off cooking them by a more traditional method. 


I like to add 1/2 bottle of Chef LaLa Homemade Tequila Lime Marinade to 2 pounds of large raw shrimp, they are usually "cooked" (pink and opaque) in around 20-30 minutes.
